Vegetarian Weekends.

Okay, I must admit I’m going crazy over this Meat-Free Monday that the McCartneys (namely The Beatle Sir Paul McCartney and her daughter Fashion Designer Stella McCartney) launched back in June. Here’s a video of MFM’s launch:

 

 

To give you more insight about this brilliant food campaign, it’s pretty much not about your ordinary vanity diet to shed off some pounds. Going meat-free, even with just a day in a week has a big impact in helping our environment slow climate change. What I love more about it is that it’s not really demanding at all, and it doesn’t require you to go full-blown vegan or vegetarian for the rest of your life. ;-)

So there, I started going Meat-free last, last Monday. And now, I’m thinking of another advocacy myself, by having Vegetarian Weekends! The rule is quite simple, I just hafta go vegetarian either Saturday or Sunday, in addition to my MFM routine. I believe it would be better if I go vegetarian 3 days straight (from Sat-Mon), but I guess my utter desire for meat will screw things up, so I’m giving myself a breather before going all-out vegetarian. I’ve been planning to do this for a long time, alongside with my newfound advocacy.

So there, I just collected some simple vegetarian recipes yesterday, and I’m off later or on Saturday for some shopping. I had mixed veggies on the fridge though should I fail to do my grocery tom. I tried making a simple meal by mixing a cup of mixed veggies to half-a-cup of rice, and then added salt and pepper for taste. It ended up well, IMO. :P

I forgot where did I get these, but let me share to you two of my planned dishes for the weekend. :)

Eggplant and Pepper Parmesan Sandwich

Eggplant and Pepper Parmesan Sandwich

*Smoky grilled veggies, rich tapenade, and tangy goat cheese make these sandwiches hearty and satisfying. A friend of mine made these and I loved them. By the next week, I was craving one of these delicious sandwiches*

INGREDIENTS (Nutrition)

  • 1 eggplant, seeded and cut lengthwise into 1/4 inch slices
  • 1 red bell pepper, sliced into thin strips
  • salt and pepper to taste
  • 1 French baguette
  • 2 ounces soft goat cheese
  • 1/4 cup tapenade (olive spread)
  • 1/4 cup grated Parmesan cheese
  •  

    DIRECTIONS

  • Preheat the oven broiler.
  • Place the eggplant and red bell pepper on a medium baking sheet, and season with salt and pepper. Broil 5 to 10 minutes, until tender and slightly browned.
  • Cut baguette in half lengthwise. Spread bottom half with goat cheese, followed by tapenade. Layer with eggplant and red pepper, then sprinkle with Parmesan cheese. Cover with top half of baguette. Cut into 4 pieces. Serve hot or cold.

    Let’s all have fun collecting wastes ^_^

    Starting today, I’ll be coming up with some few green ideas that I’ll be posting here every now and then. Okay, to clear things up, it’s not anything perverted, really. :P Since I have been a fan of our environment, not to mention watching Nat Geo and Discovery channels to boot (dork!), I believe that something like this should be broadly disseminated to everyone. Hence, I am certain that this everyone (you) will get up fast and start saving the environment in their own little ways.

    So let’s start up with–trash bags! :) But hey, they are not just ordinary, boring black trash bags. These come up in different colors with polka dot designs. Plus, they are “scented”. But the best part is, these plastic trash bags made of PVC are biodegradable.

    The person behind this brilliant idea is an artist named Adrian Kondratowicz. He started the project in the streets of New York last year (2008). Seems like right now, it spans across the city of Berlin, Germany. It would be nice to start one here in the Philippines.

    What does surround you, defines you.

    Disclaimer: poetically-infused with all emotions, and an inexplicably long post. :P

    A wise person once told me, “what does surround you, defines you.”

    Perhaps, that person is right. :)

    Remember the times when you’re surrounded by things that affect your life greatly–from toys to gadgets, from kiddie dresses to sensuous LBDs, from impish childhood friends to mature friends. Everything seems to be ever changing, yet every little thing puts an imprint of influence on you, making you a wiser, more experienced person as you as you embark a sojourn on a journey to life.

    They are either good or bad. They create either a little or huge impact in your life. And, there’s definitely a lesson learned for every road taken. That lesson is, you know what you deserve, and who/which deserves you in return.

    Like me, for instance, I have never been so happy with what I have right now, and I will never stop getting more ecstatic each day. Happiness is something earned in order for it to be gained. But, honestly, happiness is actually a state of mind–you can even ask your shrink about it.

    Not everything is made of happiness. That’s why, rather willfully purge all the bad. Sometimes, bad things are masked by deceitful guises. You’ll never know how disdainful, perverse, precarious, or worst, nefarious it is until you unveil the real color of mire. Who wants to be stuck in the reeking rut anyways? Who wants to be infected by the stench?

    Things that surround me are far more different than what it was a year or two before. Here are a few things that influence me today, for example:

    I have discovered the wonders of nature, or say appreciated it the most, as soon as I traveled halfway around the world. You may actually think that both images are taken in Belgium, but they’re not! The first picture is taken in the Philippines, whilst riding a van going to Subic. I believe that’s somewhere in Pampanga. The latter is taken in Ghent, Belgium, in a place where I used to stay for a while. :)

    Never did I care about nature this much, or at least in my very own way. I keep paper and plastic bags, and reuse them after. I never ever throw trash elsewhere besides the bin. I use the clearer side of hard copies for reprinting documents, and then shred them once all sides are used to be recycled later on. As much as possible, I try using my Starbucks tumbler, rather than asking for a plastic container when ordering a drink. I know I can hardly ride or own a hybrid car here, nor brisk walk instead going to and fro the office. But, no matter how little deeds they may be, they contribute a lot to our environment!

    I suggest starting your own little deeds as soon as NOW, and help save mother nature. :)

    Haruki Murakami

    Works pretty piled up, but I never complained. Well, better piled up than empty, should I say. :) I bought a book from Haruki Murakami weeks ago to convince myself to start reading again. I haven’t started on this one to be honest, since I resolved into leafing Neil Gaiman‘s Stardust instead. ;)

    I guess, this is something that will never ever fade in me–my love for sweets! Hence, my fervid love for chocolates heightened when I passed by a local store in Ghent. Oh my gosh, these are lots! i never ever got enough buying boxes of them. :)

    Adieu Havaianas for now (well, not really). :P I’m feeling all the comfort sans sacrificing a bit of fashion donning gladiator sandals to work. :-) Albeit it takes a HUGE toll in my time putting the straps altogether, wearing this never felt uneasy. It’s great for commuters like moi who are always required to walk all the time!
